Right after you've cooked for 90min and you turn the stove off do you take the jars out? Where is a sanitary place to keep them until they cool dwn, or does it not matter that much? How long must it cool before inoculating?
 
I created a foil room, covered in aluminum foil. Any where that has been whipped down with cleaner and sprayed with air freshener and air cleaner. Always where gloves and make sure your clothes and hands are clean. Don't sneeze on them, pretty simple ;]
 
Let them sit in pressure cooker after cooking for a few hours or overnight
They are safe in there while they cool down .
Wait for the jars to cool all the way down to inoculate.
I usually tighten the lids down right as they're brought out

When I innoculated the jars were still warm, not hot to the touch though. I had to do this because i was leaving and didnt have enough time to do it later. Do you think this would have killed the spores? I hope not
 
Should be a few days to a week.

As for the heat when you inoculated them, it's not ideal, but they should be fine. I'm sure spores can survive anything that doesn't burn the human hand.

that's about the temp i inoc the jars.. haven't killed em yet.

as long as you can hold the jar in your hand for a long time without burning it, you should be good, ime.
