The other day Ice House went on a fishing trip. Fishing was fantastic.

Mother earth smiled upon Ice House and blessed him with great weather and wonderful bounty.

Two Wild Chinook Salmon. Rich in fat, fantastic flavor. From the depths of the wild blue ocean.

The bigger fish was 19lbs and the other about 14lbs.

Some of the fish now sits in a brine to prepare it for being smoked above an apple wood fire.

Congrats, man! My fishing this year has yielded nothing more than a brace of kokanee, but my dad's coming back from Alaska soon and he usually brings home the goods (and shares!).
 
Sorry for bringing back such an old thread, I had taken some photos of a more recent fish that was smoked recentlt.The pictures are just of a fillet and the preppings for smoaking.

I make a brine that consists of Yoshidas sauce and hot red curry paste. The fish soaks for 24 hours in the brine.

A fire of apple wood is then prepared with plenty of nice hot coals. So wet pieces are added to the fire the fish is added and then the lid is shut.

8 hours later it comes out delicious. Smoaky, tender, moist, meat with an extremely high fat content that creates a flavor like none other.

i literally said - good god that looks good - out loud on reading this post.
i was supposed to go fishing this past weekend, but i spoze i hadnt been propery motivated yet :D shot :D
