Double boiler vinegar evaporation

Is it possible to use a double boiler as opposed to a food dehydrator to evaporate the vinegar. What sort of temperature does a double boiler get too?

yes, not sure about temp but I have done it with DMT I salted out of xylene with acetic acid.

Awesome. Could i put it straight into the double boiler pan or shall i put it in something else and then into the double boiler? I read the d-limonene vinegar dmt extraction and it seemed to work ok there but wondered if you could think of anything i should do differently if it's mesc?
