I never read about this in my brief reading about San Pedro succulents, but after reading various ways to cook the food, I decided to just try it raw.

I cut a 1ft (2 inch in diameter) section off a plant in my window - it doesn't grow so big and fat as I see in other places.  Then I cut V's around the spines to remove them (a carrot peeler probably would be better), then I slit the cutting in half along the length.  Then I removed the core in each half of the cutting by running my thumb under it.  Then I sliced the halves into 1 inch lengths.

I simply popped them in my mouth, 1 at a time, and chewed lightly to get the meaty sections off the hard skin, then chewed the skin to make sure there was no more flesh, then spitting the tough skin out ... repeated for all sections.

I was shocked!  I thought it would be so terrible and yucky as I always read.  To my surprise, it tasted about as bitter as eating a cucumber with the skin on.  Not bad at all, not at all.

I wonder why I don't read about eating San Pedro raw.

Can anyone tell me why this isn't the best way to enjoy San Pedro?
