Hey, sounds like a nice travel you did. I had read about Ajanta and Elora before my first trip, when I was looking for places not too far from goa to check these amazing temples.. In the end we went to Hampi, but definitely gotta go there sometime, the pictures you posted are very nice !
As for getting sick, yeah a lot of people get there in india at some point.. Last time I was there, my wife, her brother and his girlfriend all got sick, not from eating the street samosas or things like that, but after eating in a quite fancy italian restaurant in Anjuna heheh... I was the only one that didnt get sick, maybe the Dreamlandlian bacteria has made me resistent haha, but I wont brag much because soon im there and I dont want to get sick 
Yes Goa is quite nice.. Did you rent a bike? Its incredible feeling of freedom to just go around on the bike there. We rented a house in Anjuna and drove around, went to places like Arambol and so on. Do you know Chapora? and scarlet's juice shop? We always had breakfast there, damn dirty looking place but actually wonderful, and funny scenes happening on the street in front... Such characters all around, and also the cows, trying to steal my fruit salad haha
Rellik.. Goa is not at all more secret language than indian.. Basically nobody there speaks portuguese anymore, only some old people.. All the madness and the people and everything is very indian (a more shanti beach version of it). Though there is some architectural influence from the portuguese, thats for sure, some very nice portuguese style big houses and so on.
