They Probably still have a layer of mycelium on the caps. As  the caps develop, the mycelium will break away and the dark color will begin to show. It's a possibility that You may have albinos - but I lean more to my first assumption.  Was it a multispore inoculation with a spore syringe, or an isolate cloned from proven gentics?
