very odd problem with LSA extraction (tried using LSAemonade)

SWIM was reading on another forum about a fairly simple LSA extraction which was basically just an acidified CWE. SWIM soaked 600, well washed, finely ground MG seeds in 2 cups of purified water and all the juice he could squeeze from 2 lemons. The mixture was stirred periodically over a period of about a week and by the end it had become very thick and gooey. it was about the consistancy of liquid laundry detergent. The mix was an off white color and hardly translucent. The mix was not active and was supposed to be about the same color and consistancy of lemonade. My theory is that this issue had to do with the Ph but i dont know much about these things. any ideas on what may have happened or how to correct the problem?
 
From my own experience, LSA is pretty sensitive.

So if you left that mixture sitting in the light, that could have destroyed A LOT of the LSA.
The high pH is good for extracting, but the high pH over the extended time period of a week might have done it too.
If it wasn't kept cold, room temp. warmth might have destroyed it also.
 
the mix was left under a bathroom sink to avoid light and was covered to prevent any potential bacteria from getting in there. i think next time im just going to try a nonpolar/polar extraction.
