Bitterness of San Pedro / Peruvianus

I'm just back from a nice holiday on Fuerteventura. Lot's of sun, good food and...cacti!
Since i live in Germany i was very impressed by the various BIG cacti growing around there. One sunny day i went for a walk and i came across of what i thought to be a Trichocereus Pachanoi or Peruvianus. So i took two cuttings of 30 to 35 cm long and about 9 cm wide.
Now i wanted to check how they taste and to my big dissapointment they did not taste bitter AT ALL!
My question is: why?

Maybe more important: is bitterness an indicator for potency?

Could it be that lots of watering just made the cactus big but not very potent? Could stressing it increase the potency / bitterness?

Off course it could be that this plant is just one of the impotent trichs...

Any advice would be helpfull..thanks :)

Those cacti are growing everywhere there...it was one huge plant with several (like 10 or so) new cacti growing from the sides. I took two of those. It did not hurt the cactus.
No offence but i don't realy understand why you're asking me that...

just wondering, took sounds like stole

i have had cutting taken from my plants w/o permission before
i'd gladly give cuttings upon request, but seeing a fresh cut on my cacti makes me BOIL
 
i can understand that...i would never intrude in a garden or a private property to steal a cactus.
back to topic: this link --> trichocereus cuzcoensis answered my questions...
some member states that bitterness is not realy an indicator for potency...he says that he had some good experiences with plants that did not taste very bitter. So the only thing i can do is test the cactus myself
