I recently had to stop my 3x3x3 hour brew. after about 3 hours i added more water and vinegar but then had to leave. I put the brew of ACRB in a jar and it has been sitting in my fridge for the past 3 days. Should it be fine if i slowly reduce it down again to a drinkable amount? Many reports on brews lasting awhile, but this one still has a lot of water in it.

Should be fine! I've had ACRB tea sit in my fridge for a few days before with no ill effects...plus bacteria doesn't like acidic/cold environments generally...

Im assuming you used caapi?

Im confused though. You stopped the brewing after 3 hours, then added more water/etc, then left, then put what was in the pot in the fridge for 3 days; and now you want to reduce that down into a drinkable amount?

If all you boiled was 3 hours then that's most likely going to be a weak brew and definitely not to the brews full potential ime.

That aside, sitting in the fridge for a few days is totally fine, otherwise if you plan for storing longterm - it's good to freeze it.
