Fan evaporation lowers the temperature of the solvent a lot (just touch the container while evaporating), thus condensing water in a humid environment. Freeze precipitation is better due to that among other reasons.

Likely some degree of polymerization or oxidation, but I don't know for sure. Both vials in your picture look light brown to me, and lightly polymerized (small chunks instead of powdery crystals).
Both are just DMT. But if you prefer one appearance over the other and know how to get it, no one is stopping you from doing it your preferred way It's just more wasteful of solvent.
Did you test your solvent for residues? One simple check is to evaporate a small amount on a very clean glass plate and see if anything is left behind.
The brown color isn’t commonly associated with DMT after evaporation. It could be oxidation or plant fats discoloring the DMT, but I’d definitely verify the solvent first if you haven’t already.
