Why is 5% acetic acid vinegar better than 8% ?

Maybe a silly question but SWIM's used an 8% acetic acid white vinegar. He never used a 5% yet, so what the difference ?
 
Okay, what a 3% difference would yield ?
Meaning is it safe, good, making thing worst ???
 
Alright, I'm being serious now =)
If I don't find the 5% acetic acid white vinegar, I may dilute my 8% white vinegar with distilled water to lower the acidity.
Is this a good idea or not ?

Hmm I'm not expecting jokes anymore !

it will however make a difference on fries. in this case either use less or up the salt quotient, to obtain the correct acid to salt ratio.:)

It seemed to work well as it is.
To SnozzleBerry, yes they are indeed better when unexpected, better and also frustrating for the logos !!
