Why is 5% acetic acid vinegar better than 8% ?

Maybe a silly question but SWIM's used an 8% acetic acid white vinegar. He never used a 5% yet, so what the difference ?

If I don't find the 5% acetic acid white vinegar, I may dilute my 8% white vinegar with distilled water to lower the acidity.
Is this a good idea or not ?

As endlessness said, you should be fine with 8%

it will however make a difference on fries. in this case either use less or up the salt quotient, to obtain the correct acid to salt ratio.
