Why is Lextek not suitable for Acacia?

I like the look of the process for the Lexrek but he does say it's not suitable for Acacia. Why is that please?

Also, it suggests using the bark of a critically endangered species, which is wholly unnecessary; the phyllodes of a non-endangered species would be highly preferable (and with a more suitable method).
