crystalizing in a stainless steel dish

have you ever tried? does it makes any problem?
It may depend on the shape of your dish, but bowl-shaped vessels, also known as bowls, may be harder to scrape with their curved sides.

The higher thermal conductivity and lower thermal mass may lead to sub-optimal results, although excessively rapid cooling - which typically leads to formation of smaller crystals - can be minimised through use of an insulating secondary container.

If these minor issues are addressed it should be fine for the most part, although one more disadvantage is that it becomes harder to observe progress on account of metal's opacity.
