I totaly agree with you, it's just, IME, all the solids don't dissolve even when mixing for 10 min. TBH, i never checked the pH, just poured more lemon juice with no change.
It's a mystery for me. Might be temperature related.

I think so. Heated to warm and there was a full dissolving of what seemed to dissolve difficult without warming. Some heat, swirling and some time did it.
