I just want to share a nice little psilo recipe. I was impressed both at the taste and at the power. I'm now sharing it everywhere and I'm planning on making it for friends.

I'm using magic truffles because that's what I'm used to but there is no reason for it not to work with shrooms.

First I dried my truffles completely, that's the way I've been keeping them for years : slice them up then dry them by air for a few days then put them in my "drying box" (a box that has a deep layer of dried up epsom salt at the bottom covered in tissue papers basically). I forget them in it for weeks sometimes. When I get them out they are basically rocks. I put them in a coffee grinder until I get a fine powder. Then I pack the powder in a jar (I make sure it's packed tight, no space for air) and I put a silica pack on top to make sure it's super dry. I've stored some for 3+years like that with no apparent loss.

So I took 15gr of dried powder. Mixed it with 100ml of lemon juice. Let it rest an hour. I mixed it again here and there to be sure. Then I filtered. It took a while to obtain clear juice. I kept the material in my freezer, I'll try cooking it later see what is left in it.
There was a bit of loss of lemon juice so I completed to be back at 100ml. Colour was a bit weird, a bit brown, but taste almost normal.

Then I made lemon curd.

I used allulose instead of sugar (I usually eat low carb) but it will work great with sugar.

100ml lemon juice
3 whole eggs
110gr allulose or sugar
1 tbsp cornstarch
70gr butter

I cut up the butter in pieces and put it on the side.
Then I heat up the lemon juice on very low heat. Just making it warm, not too hot. While it was heating I whisked the eggs and sugar on the side until the mix got almost white.
In a small bowl I put the corn starch and mixed it with a few spoonfuls of warm lemon juice to make a thin paste. Then whisked that paste into the eggs and sugar.
Then added in what was left of the warm juice, still whisking everything.
Then I put it all back in my pan, turned the heat up just a bit. It was pretty much liquid at first then began thickening after a few minutes. I kept mixing with a spoon to make sure it didn't burn.
I turned off the heat, added in the butter, kept mixing. Put it in jars.

The result? It tastes like normal lemon curd. Completely delicious. Two spoons are enough to send someone up for an hour or two (I do notice that the trip is much faster to come but also to go than if I take them dry).

So I confirm that the lemon tek works very well, but also it's pretty cool that it can be used to bake ! I'll be making lemon curd cookies with low enough doses to make for a happy dessert and not a "go confront your ancestors" dessert for my friends. But for myself I've already tried eating half a jar and it packed a punch. I got a few hours of a pretty intense trip. And it was much nicer than taking a bunch of pills and battling nausea. The colour is a big wrong, a bit brownish, but the taste is great.

You can do any variation of lemon curd obviously.

Just putting the idea out there, might as well make things delicious when it's possible !

Also yes Psilo is degraded by water, but not in hours or even in days. You can totally make some a week in advance, or two, or more. You'll get some loss after a while but it's not gonna turn into normal lemon curd in a month.

Here is my current jar so you can see the slightly off colour, but still looks good !
