mix 50% white rye or white wheat flower with 50% whole flour of your choice. Dissolve yeast in warm, not hot water which will kill the yeast. Add a little bit of salt to the yeast water then mix with the flour. Knead until all flower has been absorbed.

Good dough consistency should be slightly sticky but should not stick to fingers anymore. Add water of flour while kneading it in until you achieve this consistency.

Add linseed's, pumpkin or sunflower seeds. Some may even like some sesame seeds. I prefer cooked whole wheat or rye, which i cook for 10-15 minutes then cool down and drain properly before adding to the dough.

Knead more.

put dough in an oiled vessel leave overnight in fridge to so it can rise slowly. big vessel or you will have to clean your fridge in the morning

next morning take 500-1000g pieces. fold and press to get the air out. Then make balls and stretch the skin.
Leave to rise for a couple minutes, maybe 15. If the bread becomes flat you have let it rise for too long. You can then fold and press again, repeat etc

add a little olive oil on top with poppy or sesame seeds or what you wish. If you dont want oil spread some flour on top or just spray with some water.

Cut an incision or two on top then shove in the oven at 180C for 30-60 minutes, you find out. Black color means it was too long. You can also open the oven at halftime to let the water vapor out.

I love good bread.

I was just having a discussion with my French friend about the quality of bread in the UK. She's been here 8 months and she goes home next week and she says the thing she misses most is the bread. I also concur that out of all the bread I have ever tasted, the French do it the best. :)

A few times I've done a cheap alchol run to calais and more often than not we would come back with a lot of bread. I've tried making my own on a few occasions, but it always turns out pretty standard.

Anyway, I guess you could say that my life is missing good bread.

Maybe I'm already in hell?
