Cactus Pickles

So I have a friend in town and I let them make a jar of cactus pickles. One of my favorite ways to share and consume cactus.
Pretty simple/straightforward.

1. Despine/de skin/ de core your cactus

2. Cut into bite sized pieces and transfer into glass vessel

3. Make a marinade/brine. My base is equal parts tamari and lemon juice with grated ginger and garlic. Ultimately you need a salty liquid and some form of acid. Feel free to experiment with flavor profiles

4. Cover bite sized cactus pieces halfway with brine. Half of the cactus should above the brine. As it sits it will pull liquid outta the cactus and be fully submerged before consumption.

5. Loosely cover and let sit at room temp for a minimum of 5-6 hours. If you let it sit for under 24h it's a marinade, and if you go longer it starts fermenting. That's okay and often preferable in my experience. I've let stuff sit for up to 10 days with no issues.

6. Remove Cactus pieces from brine and serve with long bridgesii spines as tooth picks

7. Giggle with loved ones, enjoy music, and movement.

Left over pickles store longer in the fridge(duh). You can also dehydrate them to make jerky bites that are excellent for hiking and traveling.

Is the brine itself palatable? I would assume that it contains desired alkaloids, so would be a waste to simply toss.
Its not something I consume. This method seems to minimize nausea and I think part of that is pulling the calcium oxalates into the brine.
It's also kinda slimy and salt but I'm sure you could power it down
