sealed outside the fridge will be ok for a while, it will eventually ferment which you will taste right away. Has carbonation, more vinegar like ext but fermented ayahuasca is fine to drink. Some Shipibo I've drank with intentionally wait till the aya is fermented to drink it. I had made some tea from 50 grams of caapi vine, boiled down to appr. 50 ml. I wanted to try and microdose some of it. Drank 4/5th over a couple of days, then forgot about it.
Now I have +/- 10 ml left. It's been standing in a longdrink glass, sealed tightly with plastic, for about a month, but outside the fridge.
I just took the plastic off to smell and I didn't notice any change (smells just as sweet/ foul as when I first brewed it lol). Also the color is unchanged. No signs of mold or decay. I'm kind of hesitant to try it out though...
