Marsofold tek evaporation question

Looking at the marsofold tek my friend was wondering about why one should pour the liquid from the crockpot into a widemouthed glass or steel container and leave overnight. Is this so that it can evaporate?

He doesnt have anything like this, would it not evaporate from a winemaking style gallon jar? or is there some kind of alternative to this stage?

He has plenty of plastic gallon containers used for brewing wine and beer etc is there a reason why He cant use this?

Thinking about it he could half the amounts used to fit into a container that he has to hand. Still interested in opinions on this though as leaving overnight doesnt seem like a very specific way to measure, and considering this would evaporate different quantities under different temperatures etc.
